Aluminum Cookware and Stainless Steel Cookware, which one is better?

Over the years, aluminum and stainless steel have taken over as the most popular metals (in place or copper and cast iron) in the manufacture of cookware. Aluminum and stainless cookware constitute more than 3/4 th of the cookware used by people today. But when it comes to using between the 2 metals, many housewives, chefs and manufacturers get split which each side vying for their type of cookware.

With respect of cleaning, both types of cookware are easy to clean and can be washed in a dishwasher (hand washing with a detergent also works) as well. Cost, brand, quality, requirements and such other factors are considered the criteria for a person to choose between aluminum and stainless steel cookware. But the question in terms of cookware still remains the same. Which cookware is better - aluminum or stainless steel cookware?

A point wise comparison starting with advantages and then disadvantages of each type of cookware is discussed below.

Advantages of Steel Cookware

1.Stainless steel is extremely durable.
2.With chromium and nickel added to steel, it has the capacity to resist scratches and even dents.
3.It doesn't react to any type of food cooked in it.

Disadvantages of Steel Cookware

1.Stainless steel actually is not a good conductor of heat (other metals are added to tackle this problem) and lacks the capacity to equally distribute heat.
2.Stainless cookware is often cored with a layer of cooper or even aluminum between its layers at the bottom side.
3.This cookware can get discolored if used against high heat. Salty environment can cause it to pit after prolonged exposure.

Advantages of Aluminum Cookware

1.It is a very good conductor of heat which is essential for cooking.
2.It has a cost advantage attached to it.

Disadvantages of Aluminum Cookware: 

1.Aluminum cookware can react with acidic and even alkaline components.
2.Aluminum particles can enter into food (contaminate) with acidic components. 3.Hence, items like tomato soups should not be cooked in an aluminum cookware.

Considering these pros and cons, it is an individual's decision to choose the type of cookware he or she wants based on their experience. Both types are available through many excellent and trusted brands.
